Winemaking
In the cellar, the grape blend, after destemming and slight crushing, fermented naturally in the old Talhas of 1200 l capacity. Daily and until the end of the fermentation, the cap was punched down several times a day. Wine and skins remained in maceration until 12 December (long after Saint Martin’s Day - 11 November) and were naturally filtered thru its “mother” (the seeds and skins laying on the bottom) The wine stabilized for several months in closed vats, without having any aging in barrel, thus fulfilling the tradition and the necessary regulations for its certification as TALHA WINE.

Tasting Notes
Elegant and complex aroma of ripe fruit, blueberries, plum, tea notes and rosemary. In the mouth has wild fruits, fine and long tannins, freshness well present.
